The German took just 19:54.8 to complete the 7.5km track, and despite missing a standing shot, she still came home 15.2s ahead of her closest rival.
France's Justine Braisaz, a three-time World Championship relay medallist, came home to claim the silver medal, while Ukraine's Yuliia Dzhima came home for bronze.
That third place saw Dzhima match the result she recorded in Wednesday's 15km individual event, behind Synnove Solemdal.
And the Norwegian now leads the overall women's biathlon World Cup standings, after just two events.
Herrmann leads the sprint standings with just the 10km pursuit left to race at the women's World Cup in Oestersund – the first of nine events on the World Cup calendar.
