A youthful Denmark team went toe-to-toe with Canada for much of the match, levelling the scores at 3-3 in the sixth end when skip Rasmus Stjerne played an open draw into the house for one point.
The turning point came in the ninth end however, with Koe drawing his last stone into the house to score the vital two points, before masterfully running the Danes out of stones in the tenth.
"That feels so good. What a year we've had and to top it off with winning the worlds," said Koe, who with the win secured his second world title. "Denmark gave a great performance and they're a great young team. Nothing flashy but they were solid.
"A shot here or there made the difference and there was no big swing till we got the deuce in the ninth end."
The USA ended the tournament on a high as they won their first medal of any colour since 2007 with an 8-6 triumph over Japan.
"It feels great," said skip John Shuster. "We worked the whole year to be here in this moment. To bring a medal home for our country is something special."
