The pair exchanged the opening four frames before Fu won three in a row, notching four half-centuries in the first seven frames.
However after the break Trump came roaring back, hitting back-to-back centuries to make it 5-4.
He won four more to make it six in a row, including another century, as the score became 8-5 in Trump's favour.
Fu fought back but another century helped Trump to 9-8, before he closed out the match.
"I'm delighted, there's a lot of relief - I've played in a lot of finals this season and lost the last three I think ," Trump said afterwards.
"Neither of us were at our best this evening; it was a bit scrappy which probably made it more exciting for the crowd to see us twitching.
"I do normally go behind in finals - maybe a bit of a slow starter - so I knew I could rattle off a few frames. I'm delighted and excited to have won."
The win continues Trump's fine form as the build-up to the World Championships continues.
