The Brit had already tasted success in the first race the previous day, but pulled out all the stops to cross in 42.734 seconds in the final – almost a second quicker than her last victory.
But the 26-year-old far from had things her own way in China, edging out Italy's Arianna Fontana into second place. Natalia Maliszewska of Poland took third.
It's a win that puts Christie, who also boasted success in Canada earlier this season, further ahead in the World Cup standings, her 35,264 points almost 10,000 better off than China's Fan Kexin.
In the second men's 500m final, Wu Dajing kept up his own blistering form on home ice to go top of the overall standings.
Winning his heat by almost two seconds ahead of his closest rival, the 22-year-old once again stepped up the fore in the final, stopping the clock in 40.368 seconds to pick up a second gold of the event.
That was enough for Wu to leapfrog Abzal Azhgaliyev into first place with 28,001 points in the World Cup – 20,000 of those coming in this weekend alone.
Choi Min-Jeong and Kim Je-Yoo once again kept up their South Korean 1000m rivalry, but it was 18-year-old Choi who took the spoils in Shanghai.
Already littered with honours despite her age, Choi crossed in 1:33.335 – just three tenths of a second ahead of Kim in second place.
And the Korean success was not done there, the World Cup leaders once again showing their class to beat Canada into second place in the women's 3000m relay. The Netherlands took third, while a penalty against the Chinese team saw them disqualified.
But China weren't to be outdone in the men’s 5000m team event, crossing the line just two tenths of a second ahead of the Netherlands in 6:49.367, their third second place in three races.
