The 27-year-old German was tenth after the jumping round in Trondheim, Norway but recovered well to beat home favourite Jarl Magnus Riiber by just 1.2 seconds.
The race came down to the final sprint to the finish line, where Riessle just outstripped Riiber and Finland's Eero Hirvonen.
Magnus Krog finished fourth, 0.06s ahead of World Cup leader Akito Watabe – who was in contention for much of the race.
"It was a tough race, I had to run fast to extend the gap to Akito, I'm totally happy," Riessle said.
It was not all good news for Germany fans, with Olympic champion Eric Frenzel disqualified over complications with his suit while jumping.
