The 2014 US Open champion has been quietly building momentum in Melbourne and was again impressive, edging a contest that revolved around three tie-breaks.
Cilic lost the first in the opening set as his trusty serve deserted him, but after drawing level he won the next two to come through 6-7(2) 6-3 7-6(0) 7-6(3).
"It was an unbelievable match, a lot of ups and downs," Cilic said in his on-court interview.
"Pablo came back and really gave me a lot of trouble ... We had a lot of tough rallies so I was really glad how I stayed in there mentally."
He could face world number one Rafael Nadal in the last eight, should the Spaniard overcome Diego Schwartzman in his fourth-round tie.
