The world number one was in a perilous position on Court One after losing two tie-breaks on the bounce, throwing away a 4-0 lead in the second edition.
But the intensity caught up with Anderson in the third set, who surrendered it 6-1 in just 24 minutes before permitting his opponent another break at the start of the fourth.
The South African rediscovered his groove to run Djokovic close, but the Serb held out to ensure a one-set shootout on Tuesday with the score balanced at 6-7(8) 6-7(8) 6-1 6-4.
Tournament organisers could have moved the match to Centre Court as light faded, but they have instead opted to squeeze in the conclusion alongside the women’s quarter-finals.
The crowd voiced their disapproval at the decision, booing and chanting "play some more" as the umpire made the announcement.
On Saturday, the all-French third round meeting between Gilles Simon and Gael Monfils was moved from Court One to Centre Court - sparking debate that the same could happen to Djokovic v Anderson.
It was later revealed that both players were happy to resume the following afternoon. The showdown is scheduled for 1pm (BST), again on Court One.
Ninth seed Marin Cilic awaits the winner in the quarter-finals.
